About the Farm

Sítio Catheringer is located in the Serra do Caparaó region at approximately 1,300 meters above sea level, an area internationally recognized for producing high-quality specialty coffees under ideal mountain conditions.

The farm extends across 7.2 hectares, including preserved native forest areas and protected natural springs that form part of the property’s environmental preservation approach.

Managed by Rafael Catheringer and his family, the farm focuses on small-scale specialty coffee production with emphasis on quality, careful post-harvest practices, and expressive sensory profiles.

Production Approach

Coffee cherries are selectively hand-picked only at peak ripeness and processed with careful attention to fermentation and drying techniques.

The farm works with controlled anaerobic fermentation methods, allowing the coffees to develop enhanced aromatic complexity, sweetness, and structure while preserving clarity and balance in the cup.

After fermentation, the coffees are washed and slowly dried under the sun on patios, with continuous manual turning and rigorous selection to ensure consistency and quality throughout the lots.

The production philosophy combines artisanal family farming with modern specialty coffee practices, resulting in coffees with strong regional identity and refined sensory character.

Background

Rafael Catheringer represents a family-driven coffee project deeply connected to the Caparaó mountains and its natural environment.

Together with his wife Gleiciane and daughter Hellen, the family maintains a production model focused on sustainability, preservation of native vegetation, and careful craftsmanship throughout every stage of the coffee process.

The farm’s protected forest reserve and natural spring reflect the family’s long-term commitment to environmental responsibility and the preservation of the region’s ecosystem.
